So, recent distractions to one side, some of my readers may be aware of the enormous marrow-or-courgette that my parents gave me last time I visited…


…I asked readers for suggestions over on my Facebook page, and had more than a hundred responses!

First up, creamy courgette and mint pasta sauce. In keeping with my usual style, I have costed in the price of courgette, as my folks don’t have enough narrow for all of you.

The peas are the real star of the show here, cooked briefly for a sweet crunch – I’m not a huge fan of peas, but they’re perfect in here.

Ingredients (serves four):

1 cup grated courgette or marrow
4 sprigs of fresh mint, finely chopped
1 tbsp lemon juice
30ml oil (I used sunflower)
60ml water
100g soft cream cheese

To serve:

75g pasta per person
50g frozen peas per person
50g frozen green…
